Eat Outside Day!

0

August 31st is National Eat Outside Day. This is a great time of year to eat outside in Flagstaff! There are so many options and benefits to eating outside. You can eat outside at home in your yard, in a park, on top of a mountain or at one of the many patios that our Flagstaff restaurants have. A few benefits of eating outside include getting a little extra vitamin D, some fresh air, and really honestly isn’t there just something really fun about eating outside (especially when you are not the cook!)?

I want to share a favorite healthy recipe that would be great on a picnic, as well as share of some great Flagstaff restaurant patios.

This is a go-to recipe for me that was recommended by a good friend. And using rotisserie chicken makes it even easier! Thank you CafeDelites for the recipe

  • 1 Rotisserie chicken deboned and shredded (skin on or off)
  • 1 large cucumber, halved lengthways and sliced into 1/4-inch thick slices
  • 4-5 large Roma tomatoes sliced or chopped
  • 1/4 red onion thinly sliced
  • 2 avocados peeled, pitted and diced
  • 1/2 cup flat-leaf parsley chopped
  • 3 tablespoons olive oil
  • 2-3 tablespoons lemon juice (or the juice of 2 limes)
  • Salt and pepper to taste
Mix together shredded chicken, cucumbers, tomatoes, onion, avocados, and chopped parsley in a large salad bowl. Drizzle with the olive oil and lemon juice (or lime juice), and season with salt and pepper. Toss gently to mix all of the flavors through.

Here is a list of some great Flagstaff restaurants that have patios:

The Toasted Owl– this place has tons of personality, healthy food and is run by one of the nicest and most generous people around.

Tourist Home– so charming inside and out with delicious food.

Brix and Criollo– two divine restaurants owned by the same wonderful family. Brix is more fine dining and Criollo (one of my personal favs!) is Latin-inspired.

Nomads Global Lounge– they have the best African Peanut Soup!

Mix– yummny breakfast and lunch, try the Mom’s grilled cheese.

Diablo Burger– right next to Mix, locally sourced meat and excellent french fries.

Old Town Creperie– um, just yum!

Josephine’s– A Flagstaff icon, fine dining in a historic structure with a beautiful patio.

NiMarco’s Pizza West- excellent pizza and a newly remodeled patio.

Here are 5 local breweries that are fun, charming and have great beer and food:

Lumberyard Brewing Co

Beaver Street Brewery

Flagstaff Brewing Co.

Mother Road (order pizza from Pizzacletta next door!)

Dark Sky Brewing (now has Pizzacletta inside!)

And last but not least in east Flagstaff-

the Oakmont Restaurant has a beautiful patio and overlooks a golf course and Mt. Elden.

I have left off so many other great restaurants, please include your favorites in the comments!

She is also always taking small steps to clean up our environment, and she is currently learning meditation and just loves learning in general! Katie and her college roommate drove to AZ from VA after college and Katie has only left briefly but Flagstaff is her home for sure! She met her wonderful husband while river guiding in the Grand Canyon.
