My Favorite Refreshing Summer Salad

Flagstaff summers are mild compared to the rest of AZ, but we live really close to the sun so the days feel intense. It’s too hot to cook. Some days it feels too hot to do much of anything. My appetite tanks when I’m hot and miserable. Heavy meals don’t sound appetizing and turning on the oven or stove is a no-go.

We eat a steady amount of grilled meals but there are days when the thought of standing in front of a hot BBQ makes me want to melt. So what to eat? My refreshing summer salad!

I can happily eat the same few meals on repeat for weeks, and this salad is no exception. Sidenote: I believe the only way to eat a salad properly is in a mixing bowl. I said what I said! 

Refreshing Summer Salad

Adapted from a recipe I found on Instagram Reels

Ingredients:

  • Cherry Tomatoes, I like the heirloom mix
  • Mozzarella Pearls
  • Arugula
  • Olive Oil
  • Balsamic Glaze
  • Everything But The Bagel Seasoning

To build your salad grab a big mixing bowl (trust me) add in a few generous handfuls of arugula then layer with mozzarella pearls (I like to quarter mine) and halved or whole cherry tomatoes. Season with salt and pepper to taste, add a generous drizzle of olive oil. Now, to really take it to the next level you need two of my most favorite pantry staples. Balsamic Glaze and Everything But The Bagle Seasoning. I joke that you could put either of those items on rocks and I would try to eat them 😉 Top generously and enjoy!

You can certainly make your own Balsamic Glaze and Everything But The Bagel Seasoning but I purchase mine. Sprouts, Whole Foods, Target, or Trader Joe’s (I buy 4 bottles at a time when I go) carry excellent options.
